Oats and Fruits Porridge

Mornings are getting darker and colder as we get closer to the end of the year. An excellent way to start your day and warm your belly, is having a warm porridge with fresh fruits. In only few minutes of work, you can have a satisfying bowl of breakfast.
The health benefits of oats are well known. Oats are nutritious: good source of fiber, rich in manganese, and contain important vitamins and minerals such as: phosphorus, zinc, copper, thiamine (B1), riboflavin (B2), pantothenic acid (B5), and iron. They also contain all the essential amino acids.
On top of its nutritious value, oats are a good source for antioxidants, and regular consumption of oats can lower the risk of cardiovascular diseases.
Adding fruits like pomegranate, persimmon, banana, or blueberries, increases the nutritional value, and result in colorful and tasty breakfast.
Basic porridge recipe (Yields 4 servings)
2 cups rolled oats
4 cups soy milk (you can substitute the soy milk with water or any plant-based milk of your favor)
¼ cup pure maple syrup
Seeds from 1 pomegranate
1 persimmon, diced
4 tabs. blueberries (dried or fresh)
1 tsp. cinnamon powder
*you can use any fruits that are available for you.
- Place a medium sauce pan on medium heat and add the rolled oats, soy milk, and maple syrup.
- Bring to boil and simmer for 5 minutes, stirring constantly to avoid the porridge from sticking to the bottom of the pan.
- Remove from heat.
- Serve: divide the porridge to 4 bowls and add the toppings.
* Optional: layer the porridge and fruits for more colorful presentation.
